We are currently planning to interail around Europe using the 15 day continuous pass.
We are unsure about how we book the individual trains after paying for the 15 day pass.Is it necessary to pay for individual trains even though we have paid for the £270 rail pass?
What is a realistic number of countries we would be able to visit for 15day? (Also considering the fact that we want to see as many as possible and do not mind spending a day in the smaller cities)
We are planning to travel from London and visit the following places:
Paris-Monaco-Rome-Venice-Pula(Croatia)-Berlin-Amsterman
Is this an unrealistic number of places to visit?

No, it isn't. But some connections if want to use some high speed trains and don't change trains to often it's more comfortable, to pay some reservations fees.
I think this tour is doable in 15 days :)
London - Paris: You may not use the eurostar, instead of some special offers. Maybe get a Bus or use the ferry from Dover to Calais.
Paris - Nice (Monaco): You can use a night train to Nice and than use a local train to Monaco. To save some money I would recommend not to stay in Monte Carlo :) , maybe Nice or Cannes. [u]https://rail.cc/en/night-train/paris-nice-icn-5773/59[/u]

Additional to the information you already got from NatureOne, you could also include Lake Bled in Slovenia or continue from Pula via Rijeka to Zagreb. Then to Lake Balaton, Budapest, Krakow, Prague to Berlin.
Or via the route given by NatureOne via Munich or Vienna.
So you see, you can include a lot if you like. :)
And I also recommend the ferry from the Netherlands (Heok) to the UK (Harwich). Stenalines offers as well some special fares train&ferry.
