Hi guys, the Q&A section mentioned that I should be able to book most trains on the day I need it, except France and night trains. But how early do i have to book them? Apparently the eurail official tip is: try to book as early as possible, months before your travel. But if possible I would like to delay the booking as much as possible to keep some flexibility(but not running the risk of ticket sold out). From your past experience, when shall I book these trains? Just ballpark is enough!

6/25 Munich to Paris night train
7/1 paris to St Malo
7/2 St Malo to Tours
7/5 Tours to Avignon
7/10 Marseilles to Barcelona
7/20 Madrid to Paris night train
7/21 Paris to Strasbourg

hey,
mostly you can book the trains up to 3 month in advance. There will be a timetable change in June, so not sure if you can book all trains in advance 3 month before you travel. I would recommend to book the night train in advance, asap :)
As sooner as you book the reservation in France, you'll pay less. A reservation for a TGV starts at 3€ and is up to 18€. This depends on the route and time of booking in advance.
