Do you already have a route planned? What kind of ticket do you intend to buy?
I would maybe add some places along the coast between Barcelona and Valencia: Tortosa, Peniscola,...Teruel is supposed to be great as well and on the scenic line from Zaragoza to Valencia.
Depending on your final route I think that a combination of a OC Pass for longer distances plus regular tickets for regional trains on shorter distances bought on the spot could make sense - but it depends on the final route. :)
