Are Italian train times released at a later date to the majority as it is telling me that the only train from Rome to Venice is a night train but if i look in April/May there are a lot more available, also could this be the case in france as well?

This is a data issue: The national railway companies release their information regarding the new summer schedules at different dates to Europäisches Fahrplancenter/HAFAS who manage the online timetable database used by DB, ÖBB and many other railway companies for their schedule search engines.
You can expect that most of the trains you find now (for dates prior to the timetable change in June) will also run during the summer with no or just minor changes.
Italian Railways are known for releasing their data quite late; as are French Railways. The latter also have the specialty of changing running times and dates of many trains also during the year as needed (due to extensive construction works throughout the network).

Little bit annoying but still have a couple months till i need to have it all planned out, so far have around 50-60% confirmed (unless they make changes later).
