We are traveling from Paris to Interlaken then from Interlaken to Florence, then on to Rome. Eurail recommended purchasing a France-Switzerland regional pass for 4 days and Italy one country pass for 3 days. This shoud work out great for our trip but will either of these passes take us from Interaken to Florence?

Hi ldeck1.
Here a calculation - prices per person:
Eurail France-Switzerland Regional Pass 4 days in 2 months:
Adult: USD 433
Saver (more than 1 traveler): USD 369
Eurail One Country Pass Italy:
Adult: USD 237
Saver (more than 1 traveler): USD 202
Plus additional reservation fees for the French TGV Lyria train from Paris to Switzerland (EUR 9 = USD 12), the train Switzerland to Italy (EUR 10 = USD 13) and inside of Italy (EUR 10 = USD 13): [ux]https://rail.cc/en/eurail-train-reservation
If you travel by point to point tickets, you will be cheaper. Not flexible anymore as most special prices are fixed on train and date - but if you know your travel dates (which you also have to know if you buy reservations in advance for your Eurail pass), then it is a very nice solution. As earlier you book, as cheaper the prices are.
Paris - Interlaken: from EUR 77 (= USD 102) - as e-ticket via [ux]https://rail.shop/sncf[/ux] or voyages-sncf.com - if possible, select to pick up at a railway station in France (Paris).
Interlaken - Florence:
1) first buy a ticket fro Interlaken Ost to Milano Centrale via https://rail.shop/sbb[/ux]
Standard fare is CHF 87 (= USD 93)
Select pick up at a station as shipping option. Do it in Interlaken station on your arrival. Easy with your order ID and passport. They speak English.
2) Buy an e-ticket at trenitalia.com for Milano Centrale to Firenze S. M. Novella available from EUR 19 (= USD 25) OR an e-ticket at italotreno.it
If you want to book it in only one step via SBB, it will be CHF 146 (= USD 157) for Interlaken to Florence
Florence - Rome: the same as above via the Trenitalia website or italotreno.it from EUR 19 (= USD 25)
Result:
A Eurail Pass like it was recommended to you (using the cheaper Saver passes if you are more than one traveler):
USD 369 (Eurail France-Switzerland)
USD 202 (Eurail Italy)
USD 38 (all reservations)
Total: USD 609
B Point to point tickets - supposing you book early and get the cheapest tickets - if not, it will still be chaper with a bit more expensive tickets.
USD 102 (Paris - Interlaken)
USD 93 (Interlaken - Milano)
USD 25 (Milano - Florence)
USD 25 (Florence - Rome)
Total: USD 191
OR
USD 102 (Paris - Interlaken)
USD 157 (Interlaken - Florence)
USD 25 (Florence - Rome)
Total: USD 284
I hope this information will help you. And if you want to travel by Eurail then add some extra stops or scenic routes like for example this one (crossing the Alps by scenic railway): https://rail.cc/en/train/zurich-to-milan
More information and photos here: https://rail.cc/blog/zurich-milano-albula-bernina/
As well, if you want to travel with Eurail, please buy your official Eurail passes here in the railcc shop ([ux]https://rail.shop/interrail[/ux]), as then you directly support this answer and the whole project. Thank you.

Hi Peter
The trains that you mentioned, are they high speed trains?
Approximately how long will the journey take to each stations?

Hi.
On some connections you can use high speed trains, but also regional trains. For you to decide. Why do you need to know it?
For journey times have a look at the schedule planers: https://rail.cc/en/search-train-route
