Hi Sebastian.
I hope you bought your Interrail pass here at railcc to support the project and this answer.
Maybe you should first read the step by step guide for Interrailers: https://rail.cc/en/first-time-interrail

Monte Carlo - Amsterdam: buy a ticket for a local train to Nice first = ~ EUR 6 - so it is ONE travel day then using the rule for night trains.
Then by night train to Paris: https://rail.cc/en/night-train/nice-paris-icn-5774/60
Then from Paris to Amsterdam: https://rail.cc/en/train/paris-to-amsterdam
Other option is for example via Luxembourg, but the night trains does not run every day.

Amsterdam - Berlin: https://rail.cc/en/train/amsterdam-to-berlin

Berlin - Prague: there is no night train for this short leg - https://rail.cc/en/train/berlin-to-prague

Prague - Italy ... for example first to Munich, then by night train to Italy.

Keep in mind, you can not travel for free in your country of residence.

thanks for the fast answer, it was really helpful but got me thinking
first I was checking trains in bahn and there were later options for example 21:00 from amsterdam to berlin
how come that for all recomendations in your links the latest one is always 7 pm?

something else, how do I book on bahn site? it only allows me to pay the full price

maybe a better route would be Italy -> Munich -> Prague > Berlin > amsterdam > Italy.. what do you think?

Because the DIRECT night train leaves Amsterdam at 1901h.
There is NO later DIRECT night train to Berlin!
https://rail.cc/en/night-train/amsterdam-prague-cnl-457/15
Book like mentioned bellow the map by following the link above.
It's up to you to chose your route and what you want to see...
