Considering I couldn't even fit the route in the title I think I may be planning a trip that is too long to fit in a month. However, our plan is for the interrailling ticket date to begin when we arrive in Italy from Greece.
We would like to take the following route but a lot of this seems to be a difficult route.
Athens - Corfu - Pompeii - Rome - Cannes - Venice - Bled - Plitvice lakes - Zadar - Budapest - Vienna - Strasbourg - Schwangau (near Munich) - Paris - Amsterdam - Rotterdam - home
The 22 ticket days are between Bari (ferry) in Italy as far as Paris. It's undecided whether we will get a plane from Paris or continue travelling to the Netherlands. Though some of the trips such as Cannes, Bled, Budapest, Strasbourg and Schwangau (and Amsterdam) will only be day trips, if you think this route is way too much to squeeze in please advise.
The trips that have been the most difficult to find direct routes are between Rome and Cannes, Cannes and Venice, Bled and Zagreb (to get to the Plitvice Lakes) and Zadar to Budapest.

be clear please-if thats for 1 month=30/31 days or 22?
But of course you can do it-you did not state any hint about how long you would like to stay in those places. I count 8 or 9 stop-places? thats 2,5-3 days for each., after the landing in IT.
To ''solve'' the ''problem'' re Cannes; simply use any routeplanner (from this site, [ux]https://rail.shop/bahn[/ux] or from ferroviedellestato=IT) to VENTImiglia=the border station, then there are local TER-SNCF-doubledeck trains ev 30 mins via Monaco-nice -Cannes onward, takes 70-80 mins, all stops, but some short stretches are quite beautiful along the coast. Reverse for going to Venezia (always use the local names for cities-upgrade your geography if not known).
the logistic problem is in Hrvatska-why do you want to see 2 lakes in 1 week? Major source of problem here is that trains are very, very sparse and buses FAR better choice. decide if you can spend that extra.
Venezia to Bled is NOT direct anymore-have to go via Austria-Udine->Villach, again all in peters routeplanner: [u]https://rail.cc/blog/travel-lake-bled-train/[/u]
Thalys trains are cheaper-with luck and if booked NOW for long time before as ''add-on'' with IR for Paris->NL [ux]https://rail.shop/beurope[/ux] . Or use bus: there are now 3 buslines doing this route thus competing very much on low price: IDbus.com, eurolines.com and megabus.com (use UK enter and pay with GBP), all bookable online and with fares from a very low 5€/ride//up.
