I am trying to reserve a place on the Paris -> Nice night train on 1st August, which departs at 21:23 PM
I have called up the rail company that runs it, SNCF, and they have told me it is full, though I could 'upgrade' for £79 (not what I had in mind!)
However here on railcc, I can buy a reservation, and for much cheaper - just checking that this reservation will be valid, even if the train is 'full'?

Maybe they just wanted to sell you something extra?!
The night train is not full if the ticket is available in the railcc-shop:

Hej,

like Peter said, just book an Abo Forfait reservation on the website or at a ticket machine. There are still seats and couchettes available and I have been travelling myself with an Abo Forfait reservation on a night train without problems last week.
