Hi.
So you start at Madrid and end up in Rome (flying back home) ?!
Then think about a route like this:
Madrid - Barcelona - crossing the Pyrenees by The Little Yellow Train ( https://rail.cc/blog/little-yellow-train-video/ )
As you want to visit Bordeaux, you could think about Barcelona to Perpignan by local trains (free), then up to Latour de Carol by The Little Yellow Train.
From there down to Toulouse and over to Bordeaux - but it is a bigger trip. Nice option is from Barcelona by Little Yellow Train and inexpensive French night train directly to Paris:
https://rail.cc/en/interrail/barcelona-to-paris
On your way to Bruges and Amsterdam, always avoid the Thalys trains - use the free IC trains.
Paris - Bruges: https://rail.cc/en/interrail/paris-to-bruges
Bruges - Amsterdam: https://rail.cc/en/interrail/bruges-to-amsterdam
Amsterdam to Berlin with possible stop in between in Cologne and/or Hamburg.
Berlin to Prague ... then you have different options.
Prague - Krakow - Budapest - Vienna - Venice
or like you said, the more direct way Prague - Budapest - Vienna.
If you want to stop in Venice, travel by overnight train from Vienna to Venice. The direct night train Budapest to Venice isn't running anymore!
If you want to cross the Alps, think about the night train Vienna to Zurich ( https://rail.cc/en/interrail/vienna-to-zurich ) and from there to Milan (Italy) using this route: https://rail.cc/en/interrail/zurich-to-milan
In Italy you can save money avoiding the high speed trains. More connections here:

There is never too much for one month. I recommend 2 or 3 nights per city - but as you are interrailing, do as much as you can. Get an impression of the different places. And in future, you can visit them in detail, your most favorite places. So you get a nice overview of Europe...

Hi.
All parts in Italy are good to do by cheap point to point tickets if you book early.
Between Venice and Budapest you could add Lake Bled or Ljubljana or Zagreb.
Or you travel Venice to Vienna by nigh train, from there to Budapest, then to Prague.
Between Prague and Amsterdam you could add Berlin.
And I would recommend the order Paris - Marseilles - Little Yellow train crossing the Pyrenees (Perpignan) - Barcelona - Madrid.
But I suppose you have a flight back from Marseilles to xxxx ?
