Here is my plan:
Amsterdam(2 days)-Bruges(1)-Paris(2)-Bordeaux(1)-Lisbon(2)-Madrid(1)-Seville(2)-Granada(1)-Barcelona(2)-nice(2)-Rome(2)-Venice(2)-Vienna(2)-Budapest(2) and then back to Vienna
In total I have planned 24 days, but I can spend extra 3 days on any city I like.
My main worry is if this route is too much for 27 days. Any comment about the route is appreciated :)

The MAIN obstacle (assuming you plan the main summer-july/augst) is;
the terrible heat in inland Espana AND the very low nr f seats and sometimes high suplmnts of RENFE=spanish rail for IR-holders. Often its better to buy a pass with less days and spend the money saved on buses overthere.
you have to do the homework yourself;use the route planner of [ux]https://rail.shop/bahn[/ux] , oebb or sbb or linked in this site and check some timings: some are easy, some eat up a whole day and many are far too short for overnight. Then rethink.
