In August, my boyfriend and I are planning this route.
Paris - 3 days
Rome - 3 days
Venice - 1 day
Hanover - 1 day
Prague - 2 days
Amsterdam - 3 days
I am thinking that the 5 country Eurail pass would be the best option. Does anyone have any advice on the trains, change on route or what we should do/see at each of our stops?

Hi.
Paris to Rome is a bit difficult. No more direct night train since December 2011.
And the night train Paris to Milan (from where you could change to Rome) is no more included in the Eurail Pass - you will have to buy a standard ticket for it. :/
Options are for example:
Paris to Zurich (Switzerland). Stay overnight, but pay attention, Switzerland is nice but very expensive.
The Zurich trough the Alps (amazing scenic route!!!) to Milan, from where you continue to Rome.

Venice to Hanover is a long trip.
I recommend the night train Venice to Munich ( [u]https://rail.cc/en/interrail/venice-to-munich[/u] ) then continue by free ICE train to Hanover. Attention, the night train is crossing Austria, so Austria has to be included in your Eurail Pass.
Optional travel route: Venice - Munich - Prague - Berlin - Hanover. Except Venice to Munich, all other connections are free with your Eurail Pass which means: no extra reservation fees. :)

If you travel the route via Zurich, then you would have the countries:
France, Switzerland, Italy, Austria, Germany, Czech Rep., Netherlands.
Then an Eurail Global Pass is the best choice for you:

Just to give you some ideas... :)
Close to Munich you have as well Castle Neuschwanstein and the city of Salzburg. Both easy to do as day trips.
And on your journey Munich to Prague, you could stop for some hours in Nuremberg. A nice old town with an interesting castle. Put your luggage in a locker at the main station (EUR 4).
