Hi.
Here is some information for Hamburg:
https://rail.cc/en/hamburg/accommodation/c
I definitely do NOT recommend the A&O hostel.
Maybe have a look on a smaller one here: [ux]https://rail.shop/hostelworld[/ux]

In Hamburg I recommend to stay in the Western part of the twon: Altona, St. Pauli, Sternschanze/Schanzenviertel.
There you can walk and it is interesting. Otherwise there are good connections by public transportation (not included in Interrail). Details public transportation: http://www.hvv.de/en/tickets/day-tickets/

For sightseeing look here: https://rail.cc/en/hamburg/sightseeing/c
I definitely recommend (not Friday to Sunday as it is crowded. During the week only in the morning recommended!) the Miniatur Wunderland: https://rail.cc/en/hamburg/miniatur-wunderland-hamburg/l491

Then if you have a ticket for public transportation, you can as well use ferries and make a short round trip:

Some bars: https://rail.cc/en/hamburg/bar-pub/c

For Copenhagen I can't give you information. I only rushed trough the past years. Sorry. :os
