Hi, my name is Cameron. :D My girlfriend and I are travelling through Europe this summer and I'm basically in charge of setting everything up while she pays for most of it. (I'm using Eurail and she is using Interrail)
Our plan is:
11-13 June: Amsterdam
13-14 June: Bruges
14-16 June: Strasbourg
16-18 June: Munich
18-19 June: Prague
19-20 June: Vienna
20-22 June: Budapest
22-23 June: Vienna
23-24 June: Innsbruck
24-25 June: Venice
25-27 June: Florence
27-2 June-July: Rome

Most of this is going as planned, but I am having much trouble finding trains to and from Strasbourg and Innsbruck without reservations. :(( I really don't want to spend any more money than I have to, but I will spend something to connect my trip together, since I have been planning this for months. Any ideas? :))

Which route you are looking for exactly?
Strasbourg - Innsbruck
Vienna - Innsbruck
Innsbruck - Venice
Concerning your already planed route:
Amsterdam - Bruges: use free IC trains, never the expensive Thalys trains!
Bruges - Strasbourg: via Brussels and Luxembourg (direct and free train).
Munich - Prague: use the direct train not the bus as the bus requires an extra reservation
Change your route if you like to: ... - Munich - Prague - Krakow - Budapest - Vienna - ...

Strasbourg - Innsbruck:
Get a TER to Basel, change there to Zürich and finally a Railjet in direction of Vienna to get to Innsbruck. No reservation required; Strasbourg - Basel and Basel - Zürich trains run frequently, RJ from Zürich basically every two hours.
