1.of course you can do. About all trains are covered.
2.I doubt if an IR will pay off for this trip. Swiss is indeed quite expensive-but for the trips in DE you can use the bayern ticket-20/21 eur/.day and IF you can prebook, Muc-Milano is just 29 eur/single. You can simply squeeze in Seefeld between Muc and Inn-adapt the route.
