hello.
in July I am going to the western Europe with a friend, and I have some questions.
do we have to make all train reservations before we leave?
and how long before the first travelling day, do we have to makes those reservations?
what about hostels reservations? do we also have to make all reservations before we leave? or is it possible to find a hostel in the town we are visiting on our tripe? I mean, are there enough cheep hostels which are not fully booked, so we are sure that there is a place for the night

Definitely NO. You don't have to make all reservations for trains in advance.
And you don't have to book all hostels in advance.
Except you know your exact travel dates - then you can - but there is no must. :)

For nearly every route in Europe there is a FREE option. In a lot of countries you even don't need reservations!

Hostels: I often book them two or three days in advance. It depends on the season. And on the city. Paris and Amsterdam can become expensive when not booking in advance. In Eastern Europe you will usually find a cheap place in a dorm one day in advance.
Nearly all hostels have Internet access - in a lot it is free. So just book your next hostel online:

Train reservations: the maximum of pre-booking time is 3 months before your departure. We always listed details for where to book at the train details.
