I plan on purchasing the 5 day in 10 day interrail pass, and want to visit a few cities before I head home. I currently live in Ireland, but will be arriving from London.

My idea would be to visit each place consecutively and simply take night trains to avoid on sleeping costs. That means I would need to plan out 5 routes that have the night train option. Other than that, I am completely flexible.

The problem is that when I try to look up night train routes online, I get a variety of explanations and not much continuity.

Are there any sample trips I could be given from point a to b to c to d to e? The only two places I am really set on are Prague and Rome. Other than that I am completely flexible, including where I fly in and out.

Just one more question for ya. I plan on doing this trip in december. Will that add any complications?

No. Will be fine. As much as I know, all night trains are also running during the winter months.
Avoid travelling to close to Christmas holidays and the weekend before as then it is absolute peak season in Europe and the trains are full.

two time have travelled before Christmas and between Christmas and new year and always realized my plans in almost 100%.
just try to buy reservation as early as possible then you avoid problems with lack of them.

Thanks for the advice? How do I book these individual trips after I have the interrail pass? With all the info you provided I'm still a bit stuck!

Simply click the detail connections - then the link to more information about the night train connection. There you will find information on how to book these reservations.
Some are available at the railcc shop.
But take care: usually reservations are available to a maximum of 2 or 3 months in advance.

At the beginning of December there is a change in the schedules, so it might be possible you have to wait until this date.

If you want to support the railcc project, buy the reservations ( [u]https://rail.cc/en/interrail-train-reservation[/u] ) and your Interrail ticket at the railcc shop - not via Bahn or something else. ;)
