I've purchased an Interrail Global Pass on Black Friday which gives me travel for "7 days within 1 month". The pass is not activated so far and valid until mid November 2025. In the meantime, I had to change my travel plans for a shorter trip that I don't need 7 days for.
I live in Germany and as far as I understand, I can only use pass for one outbound journey and one inbound journey from Germany. However, can I use unused travel days for a second trip later if I then travel across the border without Interrail? Am I right that the second trip would need to be within 1 month after the first day of the first trip?

I don't see a rule that the inbound trip has to be specially on the last day at https://www.interrail.eu/content/dam/_new-structure/doc/terms/conditions_of_use_version_13.pdf (par. 4.3.2)

Halloechen-auch Inhaber einer D=Ticket und doc kein DE. Wie schon üblich bei viele DEutsche: Sie /du? machst es dich viel zu schwierig. De fakto ist es so im System eingebaut, dass du bloss 2 (=zweoi, in einige Länder sind es 3) tage von was du gekaufst hat AUCH im Heimatland nutzen darf. Egal wann/wo. Es waere sogar möglich falls du zB Köllner bist, eine Tagestour im Luxus verspaetungs ICE nach B, HH oder N zu machen und am abend wieder rück-und dann mit deine D-ticket im RE nach Aachen und nach Belgien weiter ohne eine ´INlandstag zu nutzen.

There is a difference between what is possible and what is allowed. The 3th day at the app is meant for people living in the middle of a big country where it isn’t possible to reach the border in 1 day. It is not allowed to use it for round trips in your own country.

The answer to the original questions are YES and YES with a paper pass. It should be the same with mobile pass but I've seen reports where the App won't let you add reservations after the inbound journey has been made. The obvious way to avoid problems is to use the paid ticket from returning home from the border on first trip and going out to the border on the second and use the "inbound" trip at the end of the second trip. There is also a problem with buying tickets for the border section where the border isn't a station stop. It is possible at DB stations with staff, there is a special webpage online (which I can't remember the URL for) - it looks like the bahn.de purchase page but has extra code in the URL.
