It should be possible if the animal is kept all the time in a closed-off container. It then counts as normal luggage together with your other luggages
Also be aware that doing this by train is not that easy of straightforward, connections PT-ES are sparse and DO need much advance planning. Consider taking a bus part of the way-but for that I really dont know how the rules are for animals.
Also check seat61 for more info about best possible ay to go by train (it lists all the way to/fro UK, so Bordeaux-Paris shouls be on the way)
