My first thought is that sounds like an american plan - which could mean that you need Eurail not Interrail. It's the sort of thing that gets posted on Tripadvisor several times a day and like them misses an important factor - travelling time! London to Amsterdam will take around 5 hours once you add checkin time, which is half a day gone and if you choose the late morning departure it's too early to do anything else in London and arrives too late to do much in Amsterdam once you've found your hotel. Amsterdam-Berlin needs the same amount of time and has the same problem. It's hardly worth going for one day. Berlin to Stockholm is a LONG journey, probably overnight so your first day there could begin with not enough sleep. Stockholm-Copenhagen is another 5 hours plus journey but you can set off at a reasonable time and arrive just after lunch.

Whether the time allowed in each city is enough (Berlin isn't) depends on what you want see, still will include lots of buildings and heavy traffic but what else? Especially in Amsterdam which has two main claims to fame - serious art galleries and a nightlife culture that under 18s shouldn't be near!
