I am in the middle of organising a trip from Malaga back to Northern England in April. I intend to take my time through Spain and France with a Senior Interrail pass.
Will I be able to use my pass on the last leg of my journey from Paris to London and then up to Yorkshire?

On Eurostar you have to pay a surcharge and must reserve in advance because these are only available in limited numbers https://www.eurostar.com/uk-en/deals/interrail

The pass is valid in Great Britain but the rules depend where you live. If you are a resident and coming home the pass allows travel from London to home in one day (and you can go out on one day). These are not extra days and must be within the overall vaildity of the pass. If you are resident in Spain (or elsewhere in Europe) and the pass was issued as that then you have normal use in Great Britain. Reservation are not compulsory on the trains to Yorkshire but might be an idea if you travel late afternoon.
