Date of travel?? Italy will issue a Schengen visa but Bulgaria and Romania do not join Schengen until the end of March and there will still be some restrictions for land travel after that date. If you travel by train check with the Bulgarian embassy whether the visa will be OK.
No journey from Turkey to western journey by train is simple - TCDD don't tell you this when they sell Interail passes. The route via Sofia is NOT recommended because it also goes through Serbia, which is slow, unreliable and not covered by a Schengen visa. Try to use the direct car from Halkali to Bucuresti (Bükreş) if it runs on your date, get reservation form TCDD station. From Bucuresti to Austria use the Romanian website https://www.cfrcalatori.ro/en/buy-tickets-in-international-trafic/ from Wien to Italy use https://fahrplan.oebb.at/bin/query.exe/dn
DO NOT ATTEMPT THE CONNECTION arrive WIEN 08:20 depart 08:28 to Innsbruck, if the arrival is delayed you will miss all the trains to Italy!

IN general: forget it-a pass is next to worthless for a trip like this. And unless you are married with trains (that means: go out of your way to avoid planes and bus and do not mind many more hrs in always late decrepit things on rails) other ways overland are far easier, quicker, even cheaper and easy to book.
As mr Steve rightly explains: there are NO MORE cross border trains to/fro GReece, nor RS=Serbije, so that means a very long detour. UNless you want to also visit those countries its just a waste of time.
