We would love to go to Italy from Amsterdam. Anyone ever did this with Interrail? And can you go everywhere with this ticket?

many, many people have done this but only those asking questions come here. You need to read https://www.interrail.eu/en You can't go everywhere and on many trains that you can use you have to pay surcharges called reservation fees.

If you travel over Germany and Switzserland there are no problems with reservations. In Italy you have to make reservations for high-speed trains called Freciarossa. How to do that you can see at www.interrail.eu.
