We would like to travel from DK to Italia with train, renting bikes in Florence, and go from there to Assisi with bikes and respectively trains.
Making stops not yet decided places.
Can you tell me, if it is possibly to take the bikes with us in the train ?

In theory yes, in reality in your case - probably no!

Trenitalia allow bikes on SOME regional trains marked with a the bike symbol in the timetable, there is a small daily fee. But you have to check carefully that the train does have the bike symbol in the details, and for Assisi also check that the train is not in fact a bus!

With Intercity there are 6 spaces per train and you have to reserve each journey.

On Frecce trains (and IC without available space, or regional without the symbol) you can only take a folding/collapsible bike which is in a bag.

So your planning will need a lot of work to make it happen.
