Hi!
From Calais to Paris there are three option (plus the Eurostar).
1) Direct TGV, runs only twice or so per day; reservation required :arr: [u]https://rail.cc/en/interrail/calais-to-paris[/u]
2) Regular TER to Lille, then with one of the frequent TGV down to Paris
3) Travelling with TER/Intercité via Boulogne - Amiens
All trains are run by SNCF :arr: [u]https://rail.cc/en/interrail-train-company/france/fr[/u] and therefore included in InterRail, however you will need extra reservations for the TGV in 1) and 2). These reservations are usually 6€ however it can happen that they are gone and you have to get one for 18€! How to avoid that :arr: [u]https://rail.cc/en/interrail-train-company/sncf/17[/u]
3) is the slowest option but without any extra reservations.

So does this sound OK? Coach from Manchester to London (it's cheaper than the train), Eurostar to Calais, and book reservations on a TGV to Paris?

Well, if you choose the Eurostar, then head straight to Paris I'd say.
In that case you do not even need an InterRail ticket since if bought in advance you usually find regular tickets for the same price or even cheaper than the discounted InteRail reservations for the Eurostar.

Read what has been told.
The very expensive supplm for that €** is for the whole trip-so you might just as well stay on that train for the fastest trip-plus much more choice, as most do not even stop in Calais. AND they serve another station as the main Calais where the TER-trains stop/start.
