How can I find out if dogs are allowed on the trains at all?

You find out from the websites of the train operators. But in the case of your ideas, there are no direct trains and in the case of Amsterdam-Gothenburg not even a simple connection - it will need at least four different trains. The overnight trains from Germany to Malmö are run by Snälltåget and SJ.

There is a direct nighttrain from gothenburg to berlin, and from amsterdam to gothenburg you have one switch (in Hamburg). But what I want to know is if one can rent a whole coupé and if dogs are allowed, since I could find that info on the website, but I will look again :)

Dogs in Snalltåget : https://www.snalltaget.se/en/faq (4rd point under "Before your Journey") , Tickets for Snalltåget at snalltaget.se/en . For SJ normal/night-trains : https://www.sj.se/en/travel-info/pets.html and sj.se/en/kop-resa for booking . For DB (operate all trains between Amsterdam and Germany )https://www.bahn.de/angebot/zusatzticket/hunde (only German , if you like i can translate it ) and bahn.com/en for booking . Best regards !

Snalltäget has only Couchetts , but its possible to reservate the whole compartment . SJ offers both , Berth and Couchette , but only berth-comparmets are completly bookable .

Ohh sorry for the small desinformation , on SJs EN its possible to book a whole Couchette-Compartment and at both , SJ and Snalltaget you HAVE TO book one if you travel with dogs , but "Pets are not allowed on the seats or on the beds and need to stay on the floor during the entire journey" thats weird !! By the way , from Gothenburg runs no internationale Nightrain , you have to go down to Malmø by Regional Train .

As Argon says, there are no international nightrains from or to Gothenburg . And there are no direct trains from Amsterdam to Hamburg, there is a minimum of one change of trains (at Osnabrück) and sometimes more.
