Depending on what your plans are in Latour de Carol, I would recommend to take the direct Lunéa night train.

A reservation for a reclining seat is ~2€, a couchette is ~17€. During the day you have to go to Toulouse first, either with a Téoz from Paris Austerlitz (~3€ reservation), or, a little bit faster, a TGV from Paris Montparnasse (~6€ reservation). From Toulouse you have TER connections to Latour de Carol.
