Hi.

Paris - Barcelona: cross the Pyrenees. It is the cheapest way instead of direct day or night trains.
Use the Petit Train Jaune - a real adventure.

Barcelona-Nice: along the coast using regional trains. Other trains (especially the Talgo crossing the Spanish-French border) have high supplements:

Nice-Italy: https://rail.cc/en/train/marseille-to-milan
In Italy use IC or regional trains. Avoid the Eurostar Italia trains.

Italy-Croatia:
either via Slovenia: https://rail.cc/en/venice-ljubljana-train/f3664
or by ferry: https://rail.cc/en/ferry-italy-croatia/f2338
