Hi!
Some thoughts about your route:
Perpignan - Latour de Carol: Here is the timetable: http://telechargement.ter-sncf.com/Images/Languedoc_Roussillon/Tridion/08-Perpignan-Villefranche-Latour-de-Carol_12_2010_tcm-22-55703.pdf
Perpignan - Zürich: The night train is very expensive, have a look here: https://rail.cc/en/barcelona-geneva-bern-zurich-night-train/f1098 As an alternative I could suggest this: Going to Latour just one way (if you start early in Perpignan you can stop in some small village along the route), then in the evening down to Toulouse. From Toulouse there should be a night train running to Geneve in the summer months (it isnt confirmed yet but was running the last years) where you can continue to Zürich with IC. Costs are only ~2€ for a nice reclining seat or ~15-20€ in a couchette. :)
I would skip Zermatt, instead go Zürich - Göschenen - Disentis - Pontresina as described here: https://rail.cc/en/glacier-express/f1750 On the next day (4) go via the Bernina Pass to Milan and then Roma.
Day (5) in Roma, then continue as planned to Munich. There you could include the trip to Nürnberg, then continue as planned. Should work although you are on a rather tight schedule. But you will see a lot of nice places, also while travelling. :)
If you need help on more detailed planning just let me know.
