Also thinking of stopping somewhere between Barcelona and Rome, along the French/Italian Riviera and possibly Krakow between Prague and Berlin. We'd like to know if this is do-able using a 31 day pass, if there are any recommendations of accommodation in these locations and if anybody has any suggestions of places we should visit between?

This is is quite the classic route covering most of Europe's big cities...a month will be just enough time to cover all these places.
I assume you are from the UK? Do you have plans already on how to get to the continent then? :arr: [u]https://rail.cc/en/london-paris-eurostar-train/f1805[/u]
However, I think it might be better to do your trip the other way round, in order to spend some relaxing days at the beach rather at the end of your trip when you might be exhausted a little already. ;) But of course you can do the trip the other way as well.

Hostel recommendations (where I've been already):
Paris: St Christophers or Oops
Barcelona: St Jordis (they have three or fours places around the town) or Kabul
Berlin: Wombats
As you have planned I would recommend to make a stop at the French Riviera...Nice would be the obvious choice as there are lots of hostels to choose from. But you will find nice places in other cities as well, if you dont find one at hostelworld also check the city of HI Hostelling.
I like Grasse and Antibes quite a lot, of course Monte Carlo might be tempting as well...good thing is all those places are well connected by train and you can spend one day visiting Grasse and Monaco for instance. Just a little bit east of Nice is Villefranche, nice little village at the sea with a rather nice (but usually a little crowded) beach. On the peninsula on the other side of the bay is the Villa Rothschild which is also worth visiting.
On your way to (or from) Barcelona think about the Petit Train Jaune as well [u]https://rail.cc/en/petit-train-jaune-latour-de-carol/f1343[/u]
If you still have time, have a short stop in Belgium, where I would recommend to visit Brugge and Antwerpen
