Hi.
If you stay in cities, I recommend you hostels, as camp sites are usually outside of the cities.
Most hostel only accept minors accompanied by an adult. As someone adult has to be responsible in case something happens.
In the bigger hostels you will have problems traveling alone as minor - in smaller ones you might have more luck.

what would happen if i had already booked a hostel and checked in being under 18 would they refuse me on the door?

It depends on the staff. In the big hostels they will refuse you. Maybe send an email first to a hostel and ask for details, if they accept minors.
I know it is sad to hear this - but you have to understand the hostels as well - not the hostel made these rules.

I have read it somewhere here, that it *might* be possible to get a hostel room as a minor if you carry sth like a written permission from your parent, including the ID details etc., stating that he/she is responsible for you in case anything happens.
I'd like to believe that, being a minor myself (with booked rooms in several hostels around Europe)...
Can anyone confirm that (or not)?

Wow, I'm glad I found this topic, I'm 17 aswell and during my trip I'm turning 18.
So the first part of my trip I'm underaged. I saw on a few websites that some hostels/hotels refuse people who are under 18 and by them selves.
You can check on booking.com, mostly you can see at the page of the hostel/hotel/camping if they alow people under 18. :)

I believe that here in Holland you can book a room as long as you're 16 years or older. :)
