Hi -
About the InterRail Global Pass: if my country of residence is France, am I allowed to take the Thalys to Am'Dam and just pay the supplement, and am I allowed to travel to Barcelona from Paris? Or is it useless to book an interrail ticket if all travels are from the country of residence towards international destinations?

Hi.
You will always have to pay for the part you travel in France:

You get a discount of 50% in France on a normal rail ticket, but only for the first travel to leave France and the last to come back to Paris. Not for transit.
I know, this rule is hard - and for persons living in big countries like France, Germany, UK, Italy, ... it is also very expensive.
Concerning the Thalys: you have the option of the fare P2 which will cover then as well France:

Paris-Barcelona: I recommend to book in advance a night train to the border - you will get really cheap tickets then:

Do not use the direct night train to Barcelona as it is very expensive:

Ok, so to be clear, if I want to travel Paris-Barcelona-Paris-Amsterdam-Paris I should get a ticket?

I think on this route, an InterRail Pass isn't worht to buy in your case with the country of residence = France.
Better to have a look on cheap offers via the Thalys (Amsterdam) website or the Corail SNCF for night trains (Barcelona)...
And yes, you will definitely have to get extra tickets to leave France.
