Hello there!
I'm planning to go on an interrail tour myself in 2months, or so(but maybe i will be able to go only next summer).
My route would be western europe mainly: Budapest-Wien-München-Amsterdam-Bruxelles-Paris-Lyon-Stutgart-Nürnberg-Prague and back.
However i have also alternative route with nord Italy in it.
I guess the Netherlands-Belgium-France-Germany are very beautiful from train. As you are young people(as myself) i think you would be much more interested of capital cities, probably to spend 1-2 days in them.
