is there a way of getting from paris to amsterdam during the day without using thalys or any other expensive trains, and if so how long would it take?

You might find faster connections using a TGV (3-10€ reservation) to Lille and then continue via Gent and Antwerpen to Amsterdam - use the schedule planner.
