Hi!
Sorry, for answering late... OK, here we go.
Starting from Enschede and getting to Italy without crossing Germany is quite a task...I dont know when you want to start on Wednesday and if you prefer to go through to Italy straight or want to make a stop somewhere in between.
So, I think it is good to go to Bruxelles first:
Enschede 0957 - 1122 Amersfoort
Amersfoort 1141 - 1240 Rotterdam Centraal
Rotterdam Centraal 1255 - 1442 Bruxelles Midi
Then you have to choose:
- Go to Paris and either get the overnight train to Italy (https://rail.cc/en/paris-milan-venice-train/f3674 or https://rail.cc/en/paris-florence-rome-night-train/f1453) or stay there overnight and go to Italy the following day
- Go via Luxembourg and Strasbourg to the Basel are (Basel, Mulhouse, maybe even Zürich or Strasbourg is fine as well) and stay there overnight. The following day, go to Milano either via Lötschberg or Gotthard route. For detailed schedules use the schedule planner (https://rail.cc/en/search-interrail-route) or ask here if you have specific questions. :)
Cant tell you much about Italy (Well, Firenze is certainly nice as well as Roma, maybe think about spending some time somewhere at Cinque Terra)...but think about staying at Nice for some days, making day trips to Monaco, Grasse, Antibes etc.. :)
On your way to Spain think about the Petit Train Jaune (https://rail.cc/en/petit-train-jaune-latour-de-carol/f1343).. In Andalusia I just have been to Sevilla and Granada which were both really beautiful cities. Maybe also think of going to Cadiz, Cordoba...
About Morocco: It isnt included in InterRail at the moment (since 2007), so maybe think twice before you go there - it is certainly an exceptional place but it is worth to stay several days and then you wouldnt be able to use your InterRail pass...just think about it.
On your way back to Enschede, I'd recommend to go via Madrid - Irun/Hendaye - Paris. Some useful links for that journey: https://rail.cc/en/madrid-paris-night-train/f1134 and https://rail.cc/en/train/paris-to-amsterdam
