How do inter-rail pass holders deal with trips that require connections. If you don't have a ticket which tells you where exactly you have to get off and on how do you know?

You can ask at stations, or print out connections at ticket machines for free.
Interesting is as well the Thomas Cook European Rail Timetable Summer 2010 - with the most important train schedules in it.
An other option is to check the connections online (for example in the evening in a hostel where you often have free internet access) and then write it down or print it out:

The Thomas Cook European Rail Timetable Summer 2010 sounds like a good idea! Can I buy one at the train stations in Vienna or Munchen?

Hi.
In the past it was possible to buy one at German stations. But I am not sure if still in 2010. Book stores in the Munich main station should have it.
But to be sure you can order it via Amazon for example.
There is as well a map called Thomas Cook Railway Map Europe ... also interesting to have - but only if you are a rail freak! ;)
