What do you think about this route:
Departure from Zagreb.
3.8. Zagreb-Rome night train
4.8. Rome
5.8. Rome-Paris night train
6.8. Paris
7.8. Paris-London Ferry connections
7.8. London
8.8. London
9.8. London-Paris Ferry connections
9.8. Amsterdam-Paris night train
10.8.Amsterdam Zurich-night train
11.8.Zurich
12.8.Bernina Express, Zurich-Zagreb night train
13.8.Zagreb

Will it be difficult route for me and my girlfriend? My calculation of the cost is about 1300 euro with InterRail ticket, Global Pass 10 days within 22 days. If it is a good calculation? Is it possible that these night trains have only ordinary seats? Thanks for your help!

The 1300 EUR should be fine for you.

Concerning your route, check these links.
If there are seats at the night trains it is mentioned.

If you want to travel on a fast way from Rome to Paris, the night train is the only direct solution.
You can do it as well with day trains - doing it the fast way with Eurostar Italia (EUR 10) plus TGV (EUR 5) is the minimum.
Except if you want to stop somewhere, have a break...
Solution could be for example Rome to Genova. Then to Nice (France). From there by cheap night train to Paris:
