We plan on buying an Interrailpass for 1st class. I read, that in Germany a regular1st class ticket includes the seat reservation. Is this the same with Interrail Pass? How about France and Spain?

Nope.
You'll have to buy separate reservations.

Reservations in Germany at www.bahn.com, choose “nur sitzplatz” or “seat only”. For France and Spain use the interrail website. Be quick, seats available for Interrail on high-speeds are limited there.

If you use the Interrail site for a reservation in Spain you will eventually reach this message "Currently reservations cannot be booked online. It can only be made at the trains station in Spain". Which is basically true, there is an almost pointless option of phoning an office in Spain that will make a provisional reservation but you have to go to a main staton in Spain and pay for it within 3 days or they cancel it.

Note : Reservations for the first class in highspeed-train in Germany are available for 5,90 €
