Travel from Paris to Benidorm and return... by train and wheelchair accessible. Quickest and easiest route and name of train companies we should contact regarding tickets and departure times. Appreciate your help.

Benidorm isn't on a railway. It's on the Denia to Alicante tramway but even that doesn't quite go to Alicante Terminal railway station.

Apart from that there is basically one route. Paris to Barcelona by TGV and change there for a fast train to Alicante. The departure from Paris Gare de Lyons around 09:30 should get you to Alicante before midnight. The mid afternoon departure gets to Barcelona around 21:30 and you'd need to overnight before resuming around 07:15 next morning arriving Alicante around 12:15 (or thee hours later). Neither sameday nor overnight in Barcelona is that convenient overall

The trains are accesible with designated wheelchair space. The difficult bit is booking it, even without a wheelchair it's a pain. For the Paris-Barcelona section start with https://www.sncf-connect.com/accessibilite/preparation-voyage-services

For Barcelona-Alicante use www.renfe.com and tick the box for wheelchair accesible before going into the pricing. Which is interesting because it appears to force you into what is effectively 1st class.
