Hi!
First-timer guide: ;) https://rail.cc/en/first-time-interrail
And some words to your route: A nice, varied route - I'd recommend the 10in22 global pass. :)
You will find lots of information about the night trains: https://rail.cc/en/interrail-night-train
Amsterdam - Munich: https://rail.cc/en/interrail-night-train/amsterdam-munich-cnl419/11
Venice - Istanbul: The route mentioned (via Budapest - Sofia - Istanbul) is good. If you have time you could include ie Belgrad or, if you are maybe thinking about the one month pass, Montenegro. Montenegro is really nice from what I've heard so far and I'am definitely going there soon. SiDUDe was there some time ago and could give you some details. :)
Hope this helps for a start - just ask if you want more details or have other questions.

Hi.
Yes you will have enough days.
Just read this rule: https://rail.cc/en/interrail-night-train
As an example the night train Amsterdam to Munich:
https://rail.cc/en/amsterdam-munich-night-train/f3745
Amsterdam CS Dep: 2031
München Hbf Arr: 0716
Fill in your ticket the date of the day arriving in Munich - that's the rule. :)
Remember: you can not use this rule on the first day your ticket is valid - but it is explained on the link above.
Next example: Munich-Rome
https://rail.cc/en/munich-rome-night-train/f2872
München Hbf Dep: 2103
Roma Termini Arr: 0905
Fill in the date arriving in Rome.
And so on ... :)
