Is there more routes that you can take than just the ones shown on the interrail travel planner?

it depends.
Which country? In remote areas possibly not but in many others there could be.
The travel planner will be biased to showing the fastest option (which may involve reservation surcharges in some countries) and there may be other trains on the same route or slower route options. The list of operators that accept Interrail is shown on their website for each country, but this is not 100% accurate! Nor is the travel planner itself, even finding the train schedules without considering any pass or reservation rules can give it problems. You really need to know where you are travelling and by which route to get the schedule.

Not sure if you mean the planner on their website or the app. The app is not online, but updatet once a month. Mostly used site is www.bahn.com. Or use Google maps with the train icon.
