Hi.

Sounds interesting your tour... and as it is an orientation tour, it should be fine.
There is one thing I am really impressed by, that's the Inlandsbanan in Sweden:
https://rail.cc/en/inlandsbanan/f1333
But you can do it on one of your next trips.

For Esbjerg to Bordeaux, I recommend you to have a stop somewhere. Either via Amsterdam or Paris using one of the CNL night trains coming from Copenhagen, or my favorite route:
Esbjerg st Dep: 1941 | free IC train
Kolding st Arr: 2023

Kolding Dep: 2108 | by CNL: https://rail.cc/en/copenhagen-basel-night-train/f3762
Offenburg Arr: 0901

(a bit short here) ;)

Offenburg Dep: 0903 | free Regional train
Strasbourg Arr: 0935

Strasbourg Dep: 1420 | TGV - supplement EUR 3-10 (there are as well some more direct TGV trains per day - but Strasbourg is nice for a stop)
Bordeaux-St-Jean Arr: 2056

I recommend to buy the reservations for the CNL and TGV some days in advance, maybe already in Basel if you know your exact travel dates.

And if you are in the corner of the Pyrenees (or at least very close to it), have a look at the Petit Yellow Train:
https://rail.cc/en/petit-train-jaune-latour-de-carol/f1343
It should be easily possible going up from Toulouse to Latour de Carol and then using the little yellow train down to Perpignan!
This is the information I can give you.
Peter :)

yes... Offenburg is only a short stop and you continue to Strasbourg, as Offenburg is not worth to stay. ;)

and the Petit Yellow train... you go up from Toulouse to Latour de Carole by normal train and then down to Perpignan by Petit Yellow Train. :)
in summer there is one wagon without a roof and you can put your luggage under the seat.
