Hi,
A friend of mine once told me that there are special student fares for the various Interrail tickets, even if you're not under 26 years old.
Because that's my situation. I'm a 26-year old student. In what category do I need to look for a ticket? Youth or adult?

Never heard of a special student InterRail fare, sorry.
You can get an <26 InterRail ticket until the day before your 26th birthday. :|
