7 o clock rule Interrail

SO, I know that if my night train leaves after 7pm, it's counted as the following day of travel for the purposes of my 10 days in 22 pass.
But what if I don't want it to count as the next day?
For example, I'm thinking of spending a day travelling from Barcelona to Paris, via Latour de Carol and Perpignan. When I arrive in Perpignan I might get the night train straight to Paris. Will this count as one day of travel? Or two?
