Hi,
For our first interrail experience we were looking for a route which included Amsterdam but then moved on to spend 2 or 3 days somewhere on the coast of spain/italy/greece then maybe to Rome/Milan/Barcelona for a couple of nights before heading back to London...
I have no idea whether this is doable as most of the travel routes on this site are for visiting lots of cities and not really touching on the coast. We are prepared to pay for hostels/maybe hotels.
Has anyone had experience of a similiar route/any other ideas?

There are several possibilities...
Close to Barcelona you can reach beaches, then the rail track to France is along the coast in direction of Nice...
In Italy the same. But it is rather expensive.
Think about Croatia... by train to Rijeka and then down the coast to Dubrovnik by bus (cheap). More details at the country topic of Croatia.
Don't forget about Bulgaria... the Black See ... easy to reach by train -> Varna.
In Greece, you will have to use either ferries or buses as the rail track isn't good to reach the beaches.
Europe is big... I know... :)
