How easy/ hard is it to find my way in Stuttgart train station - coming by S-bahn from the airport and trying to catch the Train going to Karlsruhe (Deutsche Bahn | ICE 1064)?
There is only 7 minutes for transfer in Karlsruhe from this train to the one going to Freiburg (Deutsche Bahn | ICE 373). Being there for the first time, is it enough time or shoul I be worried about missing the second train?

the itinery you presumably have will be the fastest which means it will show the latest S-bahn train that will get you into the city in time for the connection with IC1064. But the those trains run about every 10 minutes so just go to the S-Bahn and catch the first available, do not wait around the airport for the one shown in you itinery. Any train that calls at Hauptbahnhof (often written as Hbf) "Tief" (low level)

You get off at Hauptbahnhof/Hbf and will be in the low level part, follow signs for the likes of DB Fern...... which should be going UP!!! 1064 is planned to leave from platform 8 which is right in the middle of the row but there is a lot of building work so check the screens in the main departure hall. 1064 is only a short shuttle to Karlsruhe and hould be ontime, if anything 373 is more likely to be delayed - although today was ontime. 1064 is planned to arrive in platform 5 at Karlsruhe and 373 departure from platform 2 - this may be confirmed on the PA before you arrive, listen for destination Interlaken. https://www.bahnhof.de/downloads/station-plans/3107.pdf

Another question: should I buy the train ticket in advance and also reserve a seat, or are the trains usually not full, and the tickets can easily bought on the train?

S=-bahn simply caNOT even be RES
It MAY be perhaps cheaper to buy Sparpreis but then you MUST use that train from S onward-which is coming off planes too big a risk to take and for such a short distance the saving is minimal. There are NO RES on most trains-just find a seat-or if not, stand. Like in any metro in this world, on a slightly larger scale. And like ANY local/regional train anywhere in DE or in fact most of EUR.
Simply buy from machine when there. In most cases then that ticket is also valid for TRAM in KA till final destination.

Also note above by steve is rather optimistic, S-Main is in big rebuild now and the walkway changes every few weeks and can be much longer as you thought of. And use brains: you will not be the only single one to have to change-dozens of people will. ANY S-bahn from Airpt into town stops at HBF-low level.

Dont write such nonsense, there are S-Bahn services from the airport calling at Hauptbahnhof upper level.

These are additional trains Mo-Fr, half-hourly between 0605 and 0935 and between 1505 and 1835.

According to the bahn.com travel planner detail and the S-Bahn-Stuttgart website trains from the airport normally only run to Hbf LOW level. However, from late July to early August the Stammstrecke is closed and in that period the special S23 service will run every 30 minutes all day/ daily to Hbf upper level (the main part).
