Hi!
There is no direct night train at the moment... the best way to travel overnight is taking the CNL train from Munich. There would be a Wien - Koeln En train available but the supplements for InterRailers are quite high. From Koeln zou would have free ICE trains to Amsterdam.
Travel times:
Overnight Wien - Munich - Amsterdam: ~15h
Overnight Wien - Koeln - Amsterdam: ~15h30
Day train Wien - Koeln - Amsterdam: ~12h
