Ok, I read the information on the website [u]https://rail.cc/en/interrail-train-reservation[/u] and I just need something clarified. Can I book tickets from any main station for any route? If possible, I would like to book all the connections from my local station (Hamburg Hbf) even though none of the connections I want to book go through Hamburg Hbf. Thank you in advance!

You will be able to get most reservations in Hamburg Hbf. Exceptions are connections in the UK and maybe parts of South Eastern Europe; in my experience troubles can occur when making reservations for Spain and Portugal but usually it works out after a few tries. :)
It's no problem to get reservations for trains to calling at Hamburg.
