Would it make a difference if i purchased an InterRail pass and they purchased a EuroRail pass? Would we still all ride on the same train from one country to another? What would the benefits be of me purchasing a InterRail pass rather than a EuroRail pass?

There would be no real difference - some alterations when buying reservations. However watch out that not all IR countries are participating in Eurail as well.

It would be a little cheaper - but you should check first if you are eligible for InterRail.
