I am bit confused about what the Interail ticket is, does it cover every train journey, for example I'm thinking of taking the London to Paris by Eurostar, will it cover that journey, or does it just get discounts?

The ticket covers a lot of train in Europe. For some trains you need a supplement (such as high speed trains, night trains, ...).
