I'm going travelling in September between the 5th and the 21st (17 days) making 6 stops, including 3 overnight trains.
Would it be cheaper for me to get the flexi interrail pass that's 10 stops in 22 days, or to buy individual tickets? I think at the moment it's about £230 to buy tickets individually, but that's not including surcharges as far as I know.

It depends on the distances you travel. With InterRail you are more flexible I think...
With the 10 in 22 you have 10 travel days from 0001h in the morning until 2359h at night on which you can use as much trains as you want.
Then there is the special rule for night trains with which you will save travel days:

About supplements: you have to pay them by InterRail as well...
